It is the most abundant polyphenol in coffee beans (5-10%) and is thought to strongly influence the flavor of brewed coffee. Its structure is an ester of both caffeic acid and quinic acids, and thermally unstable, yet coffee is the major source of Chlorogenic Acid in American diets.
