Herbal cordials are alcoholic beverages made by infusing herbs, spices, and fruits in alcohol. They are often consumed as a digestive tonic or as a way to boost the immune system. The preparation of herbal cordials involves adding varying types of liquors to a highly sweetened reduction of herbal ingredients. It is, in essence, making a syrup.

Cordials have a long history, dating back to medieval Europe, where they were initially crafted as medicinal elixirs believed to promote health and vitality. Cordials were often prescribed as remedies for digestion, relaxation, and other ailments. Over time, their role evolved from strictly medicinal to more recreational, becoming a popular base for cocktails or served as a refined after-dinner drink. Today, cordials blend tradition with creativity, offering both culinary pleasure and potential health benefits.

To make an herbal cordial, start by selecting fresh or dried herbs, spices, and botanicals based on your desired flavor profile and potential health benefits. Combine them in a clean jar with a high-proof alcohol such as vodka or brandy, ensuring the ingredients are fully submerged. Let the mixture infuse in a cool, dark place for two to six weeks, shaking occasionally to extract flavors. Strain the infusion through a fine mesh sieve or cheesecloth, then sweeten to taste with honey, simple syrup, or another natural sweetener. Bottle the cordial and let it rest for a few days to allow the flavors to meld before enjoying it neat, in cocktails, or as a digestive aid.
