Today’s sweet corn varieties are bred to be as sugary as candy; lettuce has been selected to remove its natural bitters, and along with them, valuable phytonutrients. Even the nutrition in meat and eggs has shifted: animals no longer raised on pasture produce food with less CLA, fewer omega‑3s, and a meaningfully different nutritional profile.
